High-Protein Chicken & Cauliflower Waffles
Ingredients:
• 250 g ground chicken breast
• 200 g cooked cauliflower
• 1 tsp nutritional yeast
• Salt, to taste
• A handful of chopped green onions
• 2–3 tbsp chickpea flour
• 1 tsp baking powder
• Cottage cheese (optional, for the filling)

Instructions:
1. Combine the ground chicken, cooked cauliflower, nutritional yeast, salt, green onions, chickpea flour, and baking powder in a bowl.
2. Mix until smooth and well combined.
3. If you’d like, add a spoonful of cottage cheese to the center before cooking.
4. Cook in a waffle maker until golden and fully cooked through.

Serve with a fresh cucumber salad or your favorite greens for a balanced meal.
